StylesLab
I'm kind of hip to the single-page layout. If you can say it all in one page and do it in an elegant fashiong then go for it. StylesLab is more-or-less just a resume with work samples on it, but it's well executed. -

Stage5
There's something to be said for a single-page design that's done well. I've said it before, but if you can pull it off then go for it. For a freelancer portfolio site this one gets the job done and then some. -
Discerning Reader
Good color choices, great background contrast and solid type treatment make this site a good design. I particularly like the detail work in how the background works with the other parts of the site and the little floury wing-dings in the header. -

Simple Shoes
I really like the "made it myself" quality to this website. Its rough around the edges and looks "home baked". The colors are quite nice and reflect the product quite nicely. -
Boxfresh
The Boxfresh site design has that very british/urban feel to it, which I really like. Solid type choices and colors lead me to read the text on the page. The code is kind of scary when you "view source" but the site works solid and the design is fresh.
